Reputation: 62104 Array The easiest way is boil them properly, when taking off, drain the water and keep rinsing off the eggs with the coldest water possible; I found it easiest to keep the eggs in your stock pot as they stay in contact w/ the cold water for longer, wait until this cold water becomes hot, drain off, repeat until the water doesn't stay "hot" anymore... this separates the hardened white from the shell some, then deshell all of them immediately. If you refridgerate them post-boiling but not deshelling, well..... good luck with getting one egg per hour.
I do it under tepid water, but I don't think it matters the temp, but you're right, under water does in fact help. Then I push them down into the garbage disposal and listen to the music of shells washing down the sink when I'm done.
